Most likely Ukrainians were evaluating F-15s for possible acquisition (yes, it has been confirmed that Ukrainians specifically requested that F-15 squadron would take part in the exercise) and wanted to get a perspective from American pilots on Su-27. I bet the Ukrainian pilot who had combat experience and thousands hours of air time under his belt, but not in Su-27 pushed the plane and himself too hard.

It could have also been technical malfunction. Accidents with the Su-27 / 33 are sadly not too uncommon.

F-15E would be a pretty good option.
 
Ukraine only has Soviet built Su-27s. The quality for both, initial production and repairs / upgrades has been great,. The issue that is going to pop-up is spare parts. Very few air forces (relatively speaking) fly Su-27 family of aircraft, and Russian won't be selling spares to Ukrainians. Ukrainians are looking at F-15 as possible replacement for both Su-27 and SU-24 as Ukraine has a paramount need for both air superiority fighter and long range maritime strike aircraft. From what I've heard reaction to F-16s was meh. Although, it's a cheaper and easier aircraft to live with.

Oleksandr was an ethnic Hungarian who loved and died for his country – Ukraine. He was born the village of Esen, Zakarpattia Oblast. He enlisted in 2015 and served in the 15th Battalion of the 128th Separate Mountain Assault Battalion “Zakarpattia”. He fought at Shyrokyne, Shakhta Butivka, Horlivka, etc.
Oleksandr leaves behind his grieving wife and 1-year-old daughter.

Dmytro Dariy was killed by a sniper bullet near Krymske, Luhansk Oblast on October 28, 2018.
Dmytro was born in Chernivtsi Oblast on October 25, 1971; he resided in the village of Sukhoverkhiv, Chernivtsi Oblast. He was mobilized in August, 2014, fought in the war zone as of October 2014, and enlisted in September 2018. He served in the 8th Battalion of the 10th Separate Mountain Assault Brigade.
Dmytro leaves behind his grieving mother.

Yaroslav Havryliuk, call sign “Siava”, was killed near Maryinka, Donetsk Oblast on October 28, 2018.
Yaroslav was born in Banyliv, Chernivtsi Oblast on May 13, 1970; lived in Odesa. He served as reconnaissance officer in the 28th Separate Mechanized Brigade, and was constantly deployed in the “grey zone” to monitor enemy positions and movements.
Yaroslav leaves behind his grieving wife.
